With regard to this drink, Dr Giorgini has drawn inspiration from a very long and laborious preparation that the Ancients used to make, starting from the Cream of tartar, i.e. from the Grapevine Essential Salt. Tartar used to be dry-distilled at high temperatures, producing an "aqueous acid" solution and a "black oil", but it was from the remaining ash that water dissolved the salt of tartar, which appeared very white when the solution was filtered and evaporated. After this purification, it was put in a crucible inside a furnace, at a temperature higher than that required for melting gold, and, after a few hours, it turned red: it was then that the salt was sufficiently "open" to give off its dyeing. Finally, after boiling this salt with alcohol for 4 or 5 days, they managed to extract its dyeing. Just as from an aromatic plant we are able to extract a small amount of essential oil, so from a salt it is possible to extract a small amount of tincture. Being tartar insoluble in alcohol, we cannot talk about dissolution, but extraction: from crystals it conveys "its quality and specific properties" to alcohol.
